A Weekend Well Spent: Thank You for Celebrating with Us

Summer Club Release Weekend is one of our favorite traditions each year, and this season was no exception. It was a joy to welcome so many members and their guests to the winery to explore four new wines, enjoy thoughtfully crafted food pairings, and spend an afternoon connecting over great wine and conversation. Whether you joined us for the first time or have celebrated with us for years, thank you for making another release weekend one to remember.

One of the highlights of the weekend was seeing our members discover new favorites—from the return of Golden Hour to the debut of our 2023 Wild Child Pinot Noir. We’re especially grateful to Seasoned for creating and serving their incredible Cream of Wild Mushroom Soup, paired with Wild Child Pinot Noir. Their thoughtful approach to food made for an unforgettable pairing and perfectly showcased how wine has a way of bringing people together around the table.

If you weren’t able to join us, or simply want to recreate the experience at home, we’re sharing the featured pairings below. We hope they inspire your own summer gatherings as you enjoy your release wines.

2025 Sauvignon Blanc

Cucumber & Feta Bites with Lime Herb Dressing

A refreshing combination that highlights the bright tropical fruit and crisp grapefruit finish of our Sauvignon Blanc.

To Assemble

  • English cucumber, sliced
  • Crumbled feta
  • Fresh cilantro

Top each cucumber slice with feta and drizzle with a simple lime herb vinaigrette.

Lime Herb Dressing

Adapted from our favorite lemon vinaigrette recipe:

  • ⅓ cup Olive oil
  • 3 Tbs. Fresh lime juice (in place of lemon)
  • ¼ cup Fresh cilantro, finely chopped (in place of parsley)
  • ½ Shallot, finely chopped
  • 1.5 tsp. Dijon mustard
  • 1.5 tsp. Honey
  • Salt & pepper to taste

Whisk together and drizzle just before serving or use a food processor in place of chopping shallot and cilantro. 


2025 Golden Hour

Crispy Feta Puffs with Peach Hot Honey

Golden Hour was made for effortless summer entertaining, and these flaky feta puffs are just as easy to love.

We paired our Golden Hour with baked crispy feta rolls finished with a drizzle of hot honey mixed with peach jam, creating the perfect balance of sweet, spicy, and savory.

Use this recipe as your starting point:

Our Twist

  1. We used puff pastry in place of the phyllo dough and folded the pastry squares in half, sealed with a scalloped edge using a fork. 
  2. We replace the chili honey glaze with equal parts hot honey and peach jam to bring out the peach notes in this wine. 

Either way, this recipe is delicious!

2023 Wild Child Pinot Noir

Seasoned’s Cream of Wild Mushroom Soup

A silky, earthy soup that perfectly complements the elegance and savory character of Wild Child Pinot Noir.

Ingredients

  • 2 Tbsp butter
  • 1 lb wild mushrooms, medium dice
  • 1 celery stalk, small dice
  • ½ white onion, small dice
  • 4 garlic cloves, minced
  • ½ red pepper, small dice
  • 1 Tbsp fresh thyme, minced
  • 1 Tbsp fresh sage, minced
  • 1 Tbsp fresh oregano, minced
  • 1 cup Sweet Cheeks Pinot Noir
  • 6 cups mushroom stock (or preferred stock)
  • 2 cups heavy cream
  • ½ tsp cayenne
  • 1 tsp chili powder
  • 1 Tbsp paprika
  • 1 Tbsp Worcestershire sauce
  • 2 dashes Tabasco
  • 2 Tbsp cornstarch
  • ½ cup water

Instructions

Sauté the onion, celery, and red pepper in butter until softened. Add the mushrooms, garlic, and Pinot Noir, cooking until the mushrooms have softened and the wine has reduced slightly. Stir in the herbs, spices, Worcestershire, Tabasco, stock, and cream, then bring to a gentle simmer. Whisk together the cornstarch and water to create a slurry, stir it into the soup, and simmer until slightly thickened. Serve warm with a glass of Wild Child Pinot Noir.

2022 Tempranillo

Dark Chocolate Bites with Tempranillo Sea Salt

Rich dark chocolate, dried fruit, and toasted pecans make an effortless pairing with our 2022 Tempranillo. The wine’s juicy blackberry and black plum notes are complemented by bittersweet chocolate, while a homemade Tempranillo-infused sea salt adds a savory finish that ties the pairing together beautifully.

Tempranillo Sea Salt

Create this simple finishing salt ahead of time to use on the chocolate. It’s also great to have on hand to sprinkle it over grilled meats and roasted vegetables.

Ingredients

  • 1 cup red wine, we used Tempranillo
  • ½ cup coarse sea salt

Directions

Put the cup of red wine in a skillet or pan and bring to a slow simmer, stirring frequently. This process takes some patience but after a few minutes, you will see the wine pull away from the pan as you stir. As the wine becomes more of a syrup texture, turn the heat down or off to fully reduce the wine into a thick paste. 

This can be added to your favorite salt, we used a coarse sea salt, to create your red wine reduction salt. 

Dark Chocolate Bites

Ingredients

  • ½ cup dark chocolate
  • ½ cup semi-sweet chocolate
  • Tempranillo sea salt
  • Dried cherries, chopped
  • Dried goji berries
  • Toasted pecans, chopped

Directions

Melt the dark and semi-sweet chocolate together until smooth. Spread into silicone molds or onto a parchment-lined baking sheet. Before the chocolate sets, sprinkle with Tempranillo sea salt, dried cherries, dried goji berries, and toasted pecans. Chill until firm, then break into rustic pieces or unmold and serve alongside a glass of 2022 Tempranillo.
