As we celebrate the acclaim of our 2021 Malbec, awarded 92 points and hailed as one of the top 14 Malbecs of 2024, I’m thrilled to share the recipe that stole the show at our Spring Wine Club Release Party: the Malbec-Paired Steak Galette with Chimichurri.

Ingredients

For the Filling:

  • 8 oz flank steak, sliced into strips or cubes
  • 1 jalapeño, stemmed, seeded, and diced
  • ½ onion, diced
  • 1 oz Worcestershire sauce
  • 4 oz Malbec or Tempranillo red wine
  • 2 tsp cumin
  • 2 tsp oregano
  • 2 dried mulato chilies (optional, but recommended)
  • Salt and pepper to taste

For the Chimichurri:

  • 1 bunch parsley, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp red chili flakes
  • ¼ red onion, finely chopped
  • 4 oz olive oil (adjust for desired consistency)
  • Salt and pepper to taste

For the Galette:

  • Puff pastry (store-bought works perfectly)

Instructions

1. Prepare the Filling:

  • In a large container, mix the Worcestershire sauce, red wine, cumin, oregano, salt, and pepper.
  • Rehydrate the dried mulato chilies by soaking them in hot water for 10-15 minutes. Once soft, remove stems, blend them into the wine mixture, and refrigerate.
  • Chop the steak, jalapeño, and onion.

2. Make the Chimichurri:

  • Sauté minced garlic and chopped onion in olive oil over medium heat until fragrant.
  • In a bowl, combine parsley, the garlic-onion mixture, chili flakes, red onion, olive oil, salt, and pepper. Adjust the olive oil to achieve your desired consistency.

3. Assemble the Galette:

  • Preheat the oven as directed by the puff pastry package.
  • Roll out the puff pastry, cutting it into squares.
  • Spoon the filling into the center of each square, fold over opposite corners, and seal by pinching.
  • Arrange on a lined baking sheet.

4. Bake:

  • Bake according to the puff pastry instructions until golden brown.

5. Serve:

  • Serve hot galettes with chimichurri sauce for dipping or drizzling.
  • Pair with a glass of our 2021 Malbec for a harmonious culinary experience.
